The grape that makes up the composition of Assyrtiko Wild Ferment, comes from the mountainous vineyard of Pyrgos, and is the most aromatic Assyrtiko on the island. Twelve hours of pre-fermentation extraction will take place, leading to small refrigerated tanks and from there to new French and American oak barrels. There, it is left until it reaches a high temperature. The special thing about this bottle is that Gaia Assyrtiko Wild Ferment has 7-8 years of aging potential.
