After the selection of the best grapes, fermentation takes place at a temperature of 14°C, a technique that produces subtle aromas that are particularly pleasing to the palate. It has a bright straw yellow color and very fine and persistent bubbles. Floral aromas of acacia and gentian with a light herbal note of sage and mint as well as aromas of grapefruit, pineapple and yellow apple make their presence felt. This wine is excellent as an aperitif but also for the whole meal with risotto and shellfish.

This wine is made from organically grown Glera and Pinot Noir grapes and vinified using the Charmat method. Staffilo Prosecco Rose has a light powder-pink color with many fine bubbles that enhance its brightness. The lively and elegant "Metodo Classico Etna Rose" better explores the character of Etna. It is produced 100% from the Nerello Mascalese variety in the Etna area - Contrada Dafara Galluzzo (Rovittello - Castiglione di Sicilia) at an altitude of 700 m. The wine remains in contact with the fine lees for several months before being bottled. After re-fermentation, Chiuse finds its own balance remaining 44 months in the bottle. The slow process of staying on the lees gives body to the wine and creates the sophisticated tertiary aromas.

Scalunera is a dark red wine produced from the Nerello Mascalese and Nerello Cappuccio varieties. It displays a rare aromatic profile, a blend of ripe, dry and pleasantly bitter sensations of red berries, cherries, yellow fruits, sandalwood, mushrooms and citrus aromas such as lemon peel. Tastewise, it has a medium body with firm tannins. This is an elegant wine that can easily be enjoyed on its own or paired with a huge variety of food such as braised, fatty fish, pork, lamb, cheese and vegetables such as aubergines and red peppers.
