On the palate, Mount Gay Eclipse rum has bold flavors of rich molasses, ripe banana, roasted pears, canned apricots and plenty of dried fruit. This rum also warms the mouth with spicy ginger, cinnamon, cloves and black pepper. Its finish has a good dose of spices and remains on the palate persistently.
