The grapes, after the end of the night harvest, are transported to the winery, maintaining the low temperature of the night. They need to stay there for 20 days before the cold extraction and the fermentation. After the end of the fermentation, Aoton Mandilaria Red Dry remains for 10 months with its fine wine lees and matures with the "batonnage" method.
